If you do not always require meat, seafood, or poultry to create soup; just look at the vegetables in your kitchen. Vegetables are always good for our health.
It is a Sunday deal for my family. Vegetable Manchurian is a goodish and full recipe. No doubt it is mouthful but little bit time intense and backbreaking. But I am sure you will be happy to make it...taste it...and delight in it.
The vegetable balls can also be steamed and added to the gravy to avoid excess oil, the real taste is in the fried version.
Ingredients: (For 4 Servings)
Veg Balls:
- 3 cups finely chopped cabbage - 1 1/4 cups carrot, grated - 1/2 cup chopped onions - 2 tbsp corn flour - 5 tbsp plain flour (Maida) - 3 to 4 clove of garlic (Leshun), finely chopped - 1 slit green chili, finely chopped - 1/4 tsp m.s.g powder (optional) - salt and to taste - oil for deep-frying
Sauce Preparation:
- 1 tbsp garlic (Leshun), finely chopped - 2 tsp finely chopped green chilies - 2 tsp finely chopped ginger (adrak) - 1 cup clear vegetable stock or - 1 tbsp soy sauce - 1 tbsp corn flour mixed with 1 cup of water - 2 pinches of sugar - 2 tbsp oil - salt to taste
Method:
The Veg Balls:
Combine the cabbage, carrots, onions, corn flour, plain flour, garlic, green chili, ajinomoto, salt and pepper in a bowl. Mix well.
Shape Spoonfuls of the mixture into small balls. If you find it difficult to form balls, sprinkle a little water to bind the mixture. Deep fry in hot oil until golden brown. Drain on absorbent paper and keep aside.
The Sauce:
Heat the oil in a wok or frying pan on a high flame. Add the garlic, green chilies and ginger and stir fry over a high flame for a few seconds.
Add the stock, soya sauce, corn flour paste, sugar and salt and simmer for a few minutes.
Just before serving, put the vegetable balls in the sauce and bring to a boil. Serve hot.

Veg Clear Soup:English Version
Ingredients: (For 2 servings)
Carrot - 1/4 (finely chopped) Beans - 4 (finely chopped) Cabbage - 3 tbsp's (finely chopped) Onion - 1/4 (finely sliced) Water - 2 cup's Corn Flour - 2 tsp's (mix it with 5 tsp's of water) Spring onion's - 2 tsp's (finely chopped) Ghee - 1/4 tsp Pepper Powder - 1/2 tsp Aji-na-motto - a pinch
Method:
Heat Ghee in a Bowl, add sliced onion and saute it. Add all the vegetables (carrot, beans & cabbage) to the bowl and saute them. Add 2 cups of water to the bowl and let the vegetables get half cooked. Mix the corn flour with 5 tsp's of water without any lumps. Add the corn flour starch to the bowl and mix well.
Add salt to taste, and aji-na-moto a pinch and let the soup sit in the stove in slow flame. Add Spring onions and pepper powder. When the soup gets a little thicker, remove from the flame and serve. You can even serve it with breadsticks or with spiced corn flakes.
