๐ Ingredients
For the tofu:
- 200g firm tofu (cubed)
- 1 tsp oil
- ½ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp garam masala
- Salt to taste
For the pulav:
- 1 cup basmati rice (soaked for 20 mins)
- 1 tbsp oil or ghee
- 1 bay leaf
- 1-inch cinnamon stick
- 2 cloves, 1 cardamom
- 1 medium onion (sliced)
- 1 tsp ginger-garlic paste
- 1 cup mixed veggies (carrot, beans, peas, capsicum)
- 1 green chili (optional)
- ½ tsp cumin seeds
- ½ tsp garam masala
- ½ tsp coriander powder
- Salt to taste
- Fresh coriander leaves for garnish

Step 1: Air Fry Tofu
- In a bowl, mix tofu cubes with turmeric, chili powder, garam masala, salt, and oil.
- Preheat air fryer to 180°C (350°F).
- Place tofu in the basket and air fry for 10–12 minutes, shaking halfway, until golden and crispy.
Step 2: Cook Pulav
- Heat oil/ghee in a pan, add cumin seeds, whole spices, and sautรฉ for a few seconds.
- Add sliced onions and sautรฉ till golden brown.
- Add ginger-garlic paste and sautรฉ till raw smell disappears.
- Add chopped vegetables and green chili. Cook for 2–3 mins.
- Add spices (garam masala, coriander powder, salt) and mix well.
- Add soaked rice and 2 cups water. Stir gently.
- Cover and cook on medium flame for 10–12 minutes until rice is done.
- Let it sit covered for 5 mins, then fluff with a fork.
Step 3: Combine
- Gently fold in the air-fried tofu cubes.
- Garnish with coriander leaves.
