ЁЯУЭ Ingredients

For the tofu:

  • 200g firm tofu (cubed)
  • 1 tsp oil
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • Salt to taste

For the pulav:

  • 1 cup basmati rice (soaked for 20 mins)
  • 1 tbsp oil or ghee
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 2 cloves, 1 cardamom
  • 1 medium onion (sliced)
  • 1 tsp ginger-garlic paste
  • 1 cup mixed veggies (carrot, beans, peas, capsicum)
  • 1 green chili (optional)
  • ½ tsp cumin seeds
  • ½ tsp garam masala
  • ½ tsp coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Step 1: Air Fry Tofu

  1. In a bowl, mix tofu cubes with turmeric, chili powder, garam masala, salt, and oil.
  2. Preheat air fryer to 180°C (350°F).
  3. Place tofu in the basket and air fry for 10–12 minutes, shaking halfway, until golden and crispy.

Step 2: Cook Pulav

  1. Heat oil/ghee in a pan, add cumin seeds, whole spices, and saut├й for a few seconds.
  2. Add sliced onions and saut├й till golden brown.
  3. Add ginger-garlic paste and saut├й till raw smell disappears.
  4. Add chopped vegetables and green chili. Cook for 2–3 mins.
  5. Add spices (garam masala, coriander powder, salt) and mix well.
  6. Add soaked rice and 2 cups water. Stir gently.
  7. Cover and cook on medium flame for 10–12 minutes until rice is done.
  8. Let it sit covered for 5 mins, then fluff with a fork.

Step 3: Combine

  • Gently fold in the air-fried tofu cubes.
  • Garnish with coriander leaves.

Tips

  • You can add cashews or raisins for extra richness.
  • Use brown rice for a healthier version.
  • Serve with raita, salad, or mint chutney.
