5 Refreshing soup based soup

1. Chilled Watermelon Gazpacho

Ingredients:

  • 3 cups watermelon (seedless, cubed)
  • 1 small cucumber (peeled, diced)
  • ½ red bell pepper
  • 2 tbsp mint leaves
  • Juice of ½ lime
  • Salt & pepper to taste

Instructions:

  1. Blend all ingredients until smooth.
  2. Chill for 1 hour.
