The process of making chapatti is best done 1-2 hours in advance, both because you don't want the hassle of kneading dough as you are getting the meal on the table, and because the kneaded dough improves further if it is allowed to 'rest' for a bit. In summer, cover the flattened balls with a clean barely damp cloth so that the surfaces do not dry out.

Sprinkle some dry atta on your chapatti board or clean smooth working surface. Take on flattened ball and dip it in dry atta to coat it on both sides. Put it on the atta-sprinkled surface, and press it down again with the heel of your hand to flatten it further.

Chapatti is a favorite bread throughout India. The ingredients for this chapatti recipe are simple: flour, water, salt and oil, but it takes practice to make them just right.

Some people like to smear each chapatti with a thin layer of ghee, immediately after it comes off the fire. Though it tastes lovely with ghee, I prefer not to use any. In the days of my childhood, it was considered mean or bad-mannered to serve ghee-less chapattis to guests, but then people were neither fat/overfed, nor prone to heart problems early in life!

Ingredients: (for 10-12 Chapattis)

Atta - 2 cups
Water - 1 cup
Salt - 1/2 table spoon

Method to make Chapattis:

To prepare the dough (A flour mixture stiff enough to knead or roll), you need a thali or a large platter with a raised rim. Sieve the atta with the salt into this.

Start adding the water, say 1/4 cup at a time, mixing it in with your fingers till it is absorbed and the atta starts to cohere into a stiffish dough (A flour mixture stiff enough to knead or roll). 

As the dough starts to form and only a little of the atta remains dry, add the water with circumspection. The idea is to use only as much as is needed to form the dough, which should not be wet and sticky, but also not so stiff as to make it difficult to work with.

Once you have a nice firm ball of dough, the trick of making soft chapattis is to knead it well. It is quite hard work, but satisfying, once you get the knack. Punch the ball of dough with the heel of your hand, and as it flattens out of all over it with your knuckles. 

When it gets thin, pull the far edge of the dough towards you with your fingers, and fold it over. Punch, knuckle and pull; punch, knuckle and pull, turning the platter with your other hand as you do so. And that is it. Keep at it for about 5 minutes, till the dough loses its stickiness, and you have the makings of lovely soft supple chapattis and serve it to your beloved hubby and kids.

How To Make Crab Curry? (29th Serv)

Yeah! It is true that crabs are cooked and eaten as a dish in several different ways all over the world. Some species are eaten whole, including the shell, such as soft-shell crab; with other species just the claws and/or legs are eaten. The latter is particularly common for larger crabs, such as the snow crab.

Indian Crab CurryIn some regions spices improve the culinary experience. In Asia, masala crab and chili crab are examples of heavily spiced dishes. In Maryland, blue crab is often eaten with Old Bay Seasoning. For the British dish Cromer crab, the crab meat is extracted and placed inside the hard shell. One American way to prepare crab meat is by extracting it and adding a flour mix, creating a crab cake. But here I am presenting Indian recipe to make a Crab Curry which is known as everlasting for cold weather and good for some health issues like cold as well. Just make it not only for your child but also the sweetest hubby.

Ingredients:

1/2 kg - Crab
1 tsp - cumin seeds
2 tsp - pepper
1/2 tsp - chilli powder
2 onions, chopped
1 tomato, chopped
5 garlic flakes or 2 tsp garlic
4 tsp - coconut grated
salt to taste
3 tbsp - oil
Turmeic powder a pinch
2 tsp - coriander leaves, chopped

Method to make Indian Crab Curry:

1. Heat a little oil and sauté the onions (1 chopped), garlic and cumin seeds.

2. Grind these spices with turmeric powder, pepper, chili powder and grated coconut to make a fine paste.

3. Fry the onions in oil till light brown. Now add the tomato and cook on medium flame for 3-4 minutes.

4. Add the crabs and stir well. Fry for a while until there is a change in color on the crab shells.

5. Add the ground masala and cook the crab curry for a minute.

6. Pour 1 1/2 cups of water, boil, covered and cook the crab curry on medium heat for 15 minutes.

7. Turn off the heat when crab curry thickens.

8. Sprinkle the coriander leaves on top before serving.

9. Now spicy Indian crab curry recipe is ready. Serve with rice.

Chicken Curry (28th Serv): Sunday Special Night

Yeah! It is our Sunday Special Night recipe. Chicken Curry with rice. What a taste it is! You know what, all your family come together and get a taste of our recipe with the fragrance of Basmati Rice. Let us see the preparation for the same.

Chicken Curry Sunday SpecialIngredients:

1/2 - chicken breasts, skinned and boned
3 garlic, cloves, crushed
1/4 tsp - ginger
1 cup - low sodium chicken broth
1 onion, chopped finely
1 tsp - olive oil
1 cup - water
1/2 tsp - cummin seeds powder
1 tsp - coriander seeds powder
1/4 tsp - garam masala
1/2 tsp - turmeric powder
1 green chilli, finely chopped
2 tbsp - coconut milk
3 tbsp - finely chopped coriander leaves

Method:

Make pieces of chicken breasts. Heat oil in a pan. Saute chicken pieces until golden from both sides. Remove and drain. Add onion and ginger-garlic and fry till golden brown. Add all the powders, and saute for a minute. Add chicken broth and water. Let it boil for 2 minutes. Add chicken pieces. Cover the pan and let it cook for approx. 30 mins.

Then add coconut milk. Cook for another 1 min. Serve with rice, either Basmati or if you like most.

Omelette with Sprouts and sev (27th Serv)

Ingredients:

Eggs - 8
Mixed sprouts, blanched - 1 cup
Sev - 1/4 cup
Onions - 3 medium
Oil - 5 tbsp
Garlic cloves, chopped - 2
Green capsicum cut into thin strips - 1 small
Dried herbs - 1/4 tsp
Paprika flakes - 1/4 tsp
Black peppercorns, crushed - 3 to 4
Salt - to taste
Green chilies, finely chopped - 4

Method:

Slice an onion and finely chop the remaining two.

Heat one tbsp oil in a pan. Add garlic and sliced onion and saute till translucent. Add green capsicum and saute for a minute. Add sprouts, dried herbs, paprika flakes, crushed black peppercorns and salt and mix well. Set it aside.

Break two eggs in a bowl, add salt and beat well.

Heat one tbsp of oil in a non-stick pan, add a portion of chopped onions and green chilies. Saute for a minute.

Add beaten eggs, mix and rotate the pan so that the eggs spread evenly. Let the underside cook for a minute. Flip over and cook again.

Place sprouts mixture on one side and top it with sev. Roll and serve hot immediately.

Ingredients:

Whole wheat tortillas - 4
Olive oil - 4 tbsp
Balsamic vinegar - 2 tbsp
Salt - to taste
Black pepper powder - to taste
Tom lollorosso, romaine and iceberg lettuce - 2 cups
Sweet corn niblets, boiled - 1/2 cup
medium, Cucumbers, cubed - 2 medium
Sour cream - 4 tbsp

Method:

Combine olive oil, vinegar, salt and black pepper powder to make the vinaigrette.

Heat the tortillas on a tawa or in a microwave oven for 20 seconds.

Evenly spread the salad on each warm tortilla, dribble sour cream and roll them up.

Kolhapur Special Misal Pav : Spicy Curry With Bread (25th Serv)

This is a traditional Indian dish sold in the streets of Mumbai, Pune and parts of Maharashtra, India. It consists of spicy curry usually made of chick peas and chili powder gravy.

The final dish is topped with Punjabi Mix or Sev (Indian noodles), onions, lemon and coriander (cilantro). It is usually served with bread toasted with butter. The dish is inexpensive and a poor man's meal.

The best Misal Pav available is at Thane outside Mamledar Office. Usually, the Pav served is a Bun Pav, but in Kolhapur it is a Sandwich bread.

Puneri Misal, as the name suggests from Pune, is also tasty. Shree Datta Guru Snacks at Panvel have a delightful Misal Pav. We experienced it some days back.

Ingredients:

Sesame Seeds (Til) – ½ tsp
Poppy Seeds (Mohri) – ½ tsp
Grated Coconut (Naral)– 2 tablespoons
Coriander Seeds (Dhane) – ½ tsp
Salt (Meeth) – to taste
Potato (Batatae)– 2 nos
Curds (Ambat Dahi ) – 1 tablespoon
Garlic (Ale) – 10gms
Onion (Kanda) – 4 nos
Tomato – 2 nos
Sprouts (Moad aleli Matki)– 50 gms
Coriander leaves (Kothimbir) – 2 springs
Oil (Tel) – 4 tablespoons
Bread – 8 Slices
Garam Masala – 1tsp
Chilli Powder – to taste
Chiwada & Shev – 50 to 100 gms

Method:

Soak the sprouts 24 hr. before you make missal. Boil Peal & keep the potatoes aside. Grind together Ginger, Garlic, Popy Seed, Seasm seeds, Coconut Coriander Seeds, Coriander Leaves into fine paste.

Fine chop onion and tomato. Take vessel and heat oil, add chopped tomato, onion, garam masala powder, chili powder & then add grinded masala. Fry well till it leaves oil. Leave water from sprouts & add to fry masala, add fresh water, add salt to taste & cook well.

To Serve:

1. Take bowl add small cubes of boil potato

2. Top with shev and chiwada add prepared sprout curry to it.

3. Garnish with chopped onion & curd.

4. Serve Hot with two bread slices.

Mixed Vegetable Soup (24th Serv)


I would like to offer a tasty soup. Yeah! It is Mixed Vegetable Soup.

Ingredients (For 5-6 Servings):

2 Medium onions
2 cloves garlic
2 large potatoes
1/2 kg vegetables - (capsicums, French beans tomatoes, mushrooms, celery, spinach, green peas, turnips.)
1 tbsp bland oil or butter
2 bay leaves
1/2 tsp black pepper powder
1 tsp salt
5 cups any stock or water
A small bunch fresh coriander leaf

Preparation:

Slice the onions. Chop or crush the garlic, if used. Peel wash and cut the potatoes in medium dice wash and prepare the other vegetables as given in the recipe for vegetables stock and chop roughly. Wash and chop the green herbs.

Method:

Heat the oil over medium heat in a heavy-bottomed pan or pressure cooker, lower the heat, add the onions, cover and cook till soft and translucent.

Add the rest of the ingredients except the stock or water and herbs. Toss over medium heat for a few minutes.

Pour in the stock or water, bring to the boil and cook till the vegetables are well softened. If using the pressure cooker, cook under pressure for 5 minutes, release the pressure and simmer for a further 15 minutes.

Stir the green herb, if used, and mash or blend the soup to a pure.

Reheat till piping hot and serve immediately.

Variations: Reduce the amount of stock by about 1 and half cups, and after blending the soup add the same quantity of milk.

  • You can use any one vegetable along with the onions and potatoes, and the same basic recipe to make for example, Celery Soup, Green Pea Soup, Carrot Soup, or Spinach Soup. Spinach Soup is improved by the addition of grated nutmeg.
  • You can hardly have a better Tomato Soup than one made as above using only 1-2 onions, 3-4 medium potatoes and 6-8 medium tomatoes. Tomatoes being so full of water, you may like to reduce the amount of water or stock. The inclusion of mint, dill or basil, coarsely chopped and added just before pureeing, lifts it int0 the gourmet class.
  • The classic cold soup Vichyssoise is exactly this recipe, using only 3-4 potatoes and 1/2 kg leeks, if available, otherwise use spring onions or regular onions. Chill and stir in 1/2 cup cream just before serving. If served hot it is called Potage Bonne Femme and can be enriched with cream or 25 gms butter.
  • You can invent your own variations: Mushroom and Green Peas; Celery and Turnip; Capsicum and Leeks; Spinach and Carrot - just endless possibilities.
