1. Chicken Curry (Indian Style)

Ingredients:

  • 500g chicken (with bone)
  • 2 onions (finely chopped)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • Spices: turmeric, red chili powder, garam masala, coriander powder
  • Salt, oil, fresh coriander

Method:

  1. Heat oil, sauté onions till golden.
  2. Add ginger-garlic paste, cook till raw smell goes.
  3. Add tomato puree and spices, cook till oil separates.
  4. Add chicken, mix well and cook for 5-6 mins.
  5. Add water, cover and cook until chicken is soft.
  6. Garnish with coriander and serve hot with rice or roti.

2. Butter Chicken (Murgh Makhani)

Ingredients:

  • 500g boneless chicken (marinated with yogurt, red chili, turmeric, ginger-garlic paste)
  • 2 tbsp butter
  • 2 tomatoes (pureed)
  • Cream, kasuri methi, garam masala, sugar, salt

Method:

  1. Cook marinated chicken till done.
  2. In butter, cook tomato puree with spices and a pinch of sugar.
  3. Add chicken, simmer for 5 mins.
  4. Add cream and kasuri methi, mix well.
  5. Serve with naan or pulao.

3. Chicken Fry (Spicy South Indian Style)

Ingredients:

  • 500g chicken (cut into small pieces)
  • Onion, curry leaves, green chili
  • Red chili powder, turmeric, pepper, garam masala
  • Ginger-garlic paste, oil, salt

Method:

  1. Marinate chicken with spices and ginger-garlic paste.
  2. Cook chicken till soft (no water).
  3. Heat oil, fry onions, curry leaves, and add chicken.
  4. Fry till dry and crispy.
  5. Serve as a starter or with rice.

4. Chicken Biryani

Ingredients:

  • Basmati rice, chicken, yogurt, fried onions
  • Whole spices, mint, coriander, saffron, ghee

Method:

  1. Marinate chicken in yogurt and spices.
  2. Parboil rice with whole spices.
  3. Layer chicken and rice in a pot.
  4. Add fried onions, saffron milk, mint, and ghee.
  5. Cover and cook on low heat for 20-25 mins (dum).
