Here’s a simple and creamy mushroom soup recipe you can make at home:

Ingredients:

  • Mushrooms – 200 grams (chopped)
  • Onion – 1 medium (chopped)
  • Garlic – 3-4 cloves (minced)
  • Butter or oil – 1 tbsp
  • All-purpose flour – 1 tbsp (optional, for thickness)
  • Milk – 1 cup
  • Fresh cream – ¼ cup (optional for extra creaminess)
  • Water or vegetable stock – 1 cup
  • Salt – to taste
  • Black pepper – ½ tsp
  • Fresh coriander or parsley – for garnish

Instructions:

  1. Saut├й Veggies:

    • Heat butter or oil in a pan.
    • Add chopped onions and garlic. Saut├й until translucent.
    • Add chopped mushrooms and cook for 5–7 minutes until they shrink and release moisture.
  2. Add Flour (Optional):

    • Add flour and saut├й for 1–2 minutes to remove raw taste. This gives the soup a creamy texture.
  3. Add Liquids:

    • Pour in water or vegetable stock. Let it simmer for 5 minutes.
  4. Blend It:

    • Turn off heat. Let it cool slightly, then blend the mixture to a smooth texture.
  5. Add Milk/Cream:

    • Pour it back into the pan, add milk (and cream if using).
    • Season with salt and black pepper.
    • Simmer for another 3–5 minutes. Don’t boil after adding milk/cream.
  6. Serve:

    • Garnish with chopped parsley or coriander.
    • Serve hot with toast or breadsticks.
