Perfect Mayonnaise : Recipe

Dear women of the house!

Learn this technique and savour the rich creaminess of homemade mayo.

Follow these steps to create creamy mayonnaise using the classic French method.

Step 1
Whisk 2 egg yolks, 2 tbsp lemon juice and 2 tsp Dijon mustard (optional) in a bowl. Whisk in 1/4 cup olive oil, a few drops at a time - if you add the oil too quickly, the misture may split.

Step 2
Pour in another 3/4 cup olive oil in a thin steady stream, whisking constantly, until thick and pale. Don't rush this step it's the secret to smooth, creamy mayonnaise. Season.

Top Tips
To make mayonnaise in a food processor, process the egg yolks, lemon juice and mustard to combine, then slowly add the oil in a thin steady stream until tick and incorporated.

Store the mayonniase in a sterilised jar or airtight container in the fridge for up to 1 week.

Ways to enjoy homemade mayonnaise.

Mayo is great with seasfood, on sandwiches and in potato salads. Try these ideas too.

1. For a quick dip, mix mayonnaise and basil pesto.

2. Combine mayonnaise with a little wasabi paste.

3. Season mayonnaise with a pinch of chilli powder. Serve with barbecued corncobs.
